The heat comes after frying

A chile-rich fat, paste or spice mixture is applied to freshly fried chicken. This creates a surface that may look oily by design. Balance matters: heat should not erase salt, chicken flavor and crust texture.

Heat labels are not standardized

“Medium” at one restaurant may exceed “hot” at another. First-time visitors should read recent descriptions and choose cautiously. Restaurants may use very hot peppers or extracts at upper levels.

Bread and pickles have jobs
