Takeout fried chicken is a race between heat retention and steam escape. You can improve the result, but you cannot fully reverse long holding.
For pickup
Order close to the intended eating time. Keep sauces and cold sides separate. Do not seal a vented box inside an airtight bag for a long drive unless leakage requires it.
For delivery
Distance, driver batching and weather affect the result. Choose a restaurant closer to you when crust quality matters more than a famous name.
Cool leftovers promptly
Do not leave cooked chicken at room temperature beyond official time limits. Refrigerate in shallow containers or arrange pieces so they cool efficiently.
Reheat with dry circulating heat
An oven or air fryer generally restores crust better than a microwave. Reheat until the chicken reaches 165°F (74°C), then serve promptly. Avoid repeatedly cooling and reheating the same pieces.
Microwave realistically
A microwave can heat chicken safely when used properly but usually softens the coating. It may be the practical choice for small portions; do not pretend it produces the same texture.
